Food Allergy/Intolerances

It seems that everyone is allergic or intolerant to a certain food, but there are so many debates and opinions on this topic that sometimes I think we are just confusing ourselves.

Personally, I know I am lactose intolerant but I still choose to have no self-control and continue to consume dairy products. However, the media, internet, and “doctors” are confusing us with their gluten-free drama and whatever else they decide to scare us with.

I’ve had stomach issues all my life and thought I would have to cut out practically everything just so I wouldn’t feel sick after eating. Turns out that most of my stomach and head aches are not due to what I am eating ( though eating healthier and in moderation is always the way to go) but when and how I’m eating.

My doctor had me write in a food diary and take not about not just what I am consuming but what time, how fast I’m eating, if I am drinking enough water, and what the nutritional value is.

I did this for a few weeks and I realized that I wait way too long to eat so by lunch time, I’m shoving the food down my throat as if I haven’t eaten for days. Anyone else have this problem?

Those stomach aches were from eating too fast and not getting enough of a balanced nutrition. This may not apply to everyone but it’s something to think about. My headaches and just overall “under the weather” feeling was from being chronically dehydrated and I had NO idea! I’m not allergic or intolerant to gluten like I assumed. Now I try to make mental notes to eat slower, manage when I eat so I’m not rushing, and DRINK WATER.

My doctor also explained that I need to watch out for overly processed foods and try to eat as organic/ natural as possible. The added chemicals, and how manufacturers process the food, can cause some digestive sensitivity.

This all seems like a lot of work, doesn’t it?

PS. Happy Hump Day! I have a race on Saturday and really nervous that it’s going to be extremely hot. Running in the heat is quite the challenge.

 

Weight Loss Frustration

I forget how much of a mental struggle getting fit can be. We want to see results right away and when we don’t, frustration and self-deprecation rears its ugly head.

I’ve been guilty of this lately and sometimes you need a reality check that you are not going to lose 10 lbs in a week… not matter what people say. I’ve been training super hard 4 times a week, and even though I see some muscle toning, the extra lbs I’ve been trying to lose is still there.

Everyone tells me that it’s my diet that will get rid of that but we all know how difficult clean eating can be. I work in an office all day and sit at a computer so I start thinking and craving things I know I shouldn’t eat. What makes it worse is that where I work, yummy treats are just a walk away. Maybe it’s stress, or hormones, or just terrible nutrition but cookies sound pretty good right now….NO! STOP!

It’s all about mental strength and teaching yourself positive self talk so those thoughts that make you feel like you can’t do this or “why bother,” wont mess with your progress.

Rome wasn’t built-in a day. Weight loss doesn’t happen over night.

 

Ps. Eat fruit! It’s good for you! Ignore those people who say you shouldn’t eat it.

Wow It’s been awhile..

but life happens!

Since my last post, I’ve been busy but I am in a place now that I realize being happy is the most important goal. Money is great, and technically you can’t live without it, but being happy within yourself is something that I think most of us struggle with.

I met one of my close friends a year ago and she has changed my life! She used to be overweight, but then she started running, working out, eating healthier and in turn has become happier, more motivated. She recently finished the Boston Marathon and it was one of those moments that you see in movies… tears, smiles, and a feeling of accomplishment. She ran the marathon last year but we all know what happened. Luckily, she was safe but never got to finish the race and since then she had to battle through all the nightmares, emotions, and just the shock of that tragedy. Her strength and perseverance inspired me to take a hold of my life and set some personal goals.

I’ve been running, even joined a running group during the winter as that’s the hardest time to get motivated to run. I’m certainly not a cold weather person. I’ve completed a ton of races, joined a cross fit gym and I have the goal to run my first half marathon in Boston this October. Sticking to goals can be tough when you are going through a hard time and this past year has been the hardest, but I’m determined to get fit and happier.

Live for yourself, not others. Be Happy!

Yummy Recipes: veggie patties

I love home made patties like this! You can make as many as you want then put them in the freezer. I never have time to make meal every single day so I love having pre-cooked food around. These are delicious and easy!

 

  • 1 carrot , grated
  • bunch  spring onions, sliced, plus extra strips to serve
  • 1 garlic clove , crushed
  • 3cm/1¼ inch piece ginger , grated
  • 400g block firm tofu , drained and crumbled
  • 2 eggs , lightly beaten
  • 2 tbsp each sesame and vegetable oil
  • sweet chilli sauce , to serve
  1. Combine all the ingredients except the oils in a large bowl with some seasoning and mix well. Heat both the oils in a frying pan. Grease an 8cm metal pastry ring or cookie cutter and place in the pan. When hot, pour 5 tbsp of the batter in and turn the heat down to medium.
  2. Cook 4-5 mins until golden, then take off the ring (be careful, as it may be hot), flip the pattie and cook the other side. Do this in batches, keeping finished patties warm in a low oven. Serve with the chilli sauce and extra spring onions, if you like.
